Vegan Quiche Recipe

Ingredients:
For the Crust:

Vegan quiche
1 ½ cups all-purpose flour
½ teaspoon salt
½ cup vegan butter or coconut oil, chilled and cubed
4-6 tablespoons ice water
For the Filling:

1 cup firm tofu, drained and crumbled
1 cup unsweetened plant-based milk (almond, soy, or oat milk)
2 tablespoons nutritional yeast
2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup chopped spinach (or any greens of your choice)
Salt and pepper to taste
Optional: Vegan cheese shreds for topping
