Creamy Spinach & Tomato Cajun Spaghetti

Ingredients:

1 cup cashews, soaked in boiled water for 30 minutes
1 lb spaghetti
Salt, for boiling water
4-6 garlic cloves, with shells intact
1 large onion, chopped
2-3 ripe tomatoes, chopped
1 can (13.5 oz) coconut milk
Juice from half a lemon
2 tbsp tomato paste
3 tbsp Cajun seasoning (e.g., Slap Ya Mama)
1 tsp garlic powder
1 tsp smoked paprika
2-3 dried arbol peppers (optional, for heat)
1/4 cup tapioca starch (or cornstarch)
3 cups almond milk
Salt, to taste
1 tsp organic sugar (optional)
Fresh spinach leaves
