Activate the yeast: In a large mixing bowl, dissolve the sugar in warm water, and then stir in the yeast. Let it sit until the yeast forms a creamy foam, about 5-10 minutes.
Mix the dough: Add the salt and oil to the yeast mixture. Gradually mix in the flour, 1 cup at a time, until the dough begins to pull away from the sides of the bowl.
Knead the dough: Turn the dough out onto a lightly floured surface and knead it until it is smooth and elastic, about 10 minutes.
First rise: Place the dough in a well-oiled bowl, and turn to coat the dough with oil. Cover with a damp cloth and let it rise in a warm place until doubled in size, about 1 hour.
Shape the loaves: Punch down the risen dough and divide it in half. Shape each half into a loaf that fits the size of your air fryer basket.
Second rise: Allow the shaped loaves to rise for about 30 minutes until they have increased in size.
Preheat the air fryer: Preheat your air fryer to 325°F (163°C).
Bake in the air fryer: Place the shaped loaves into the air fryer basket (one at a time, if necessary) and air fry for about 20-25 minutes, or until the tops are golden brown and the bread sounds hollow when tapped.
Cool and serve: Remove the bread from the air fryer and let it cool on a wire rack. Slice and enjoy your homemade Amish White Bread!
