6. For the whipped cream, beat the heavy cream, confectioners’ sugar and vanilla extract in a chilled bowl until stiff peaks form.

7. Assemble the cake by placing one cake layer on a serving plate. Spread a layer of whipped cream, followed by a layer of cherry filling. Place the second cake layer on top and repeat.

8. Frost the top and sides of the cake with the remaining whipped cream. Decorate with fresh cherries and chocolate shavings.
