Mix flour, salt, and yeast in a large bowl
Add water and stir
Cover the bowl and let it rest for 12-18 hours
Fold dough a few times to release air and place on floured parchment paper
Let dough rest for up to 2 hours
Preheat a lidded cast iron Dutch oven in the oven at 425°F
Carefully place dough in Dutch oven and cover
Bake for 30 minutes
Remove lid and bake for an additional 10-20 minutes
Let bread cool for 30 minutes before enjoying
