Directions:
Prepare the Cauliflower:
Preheat the oven to 200°C (400°F).
Cut the cauliflower into bite-sized florets and place them on a baking sheet.
Drizzle with olive oil and toss to coat the cauliflower evenly. Season with salt, pepper, garlic powder, and oregano.
Roast the Cauliflower:
Roast the cauliflower in the preheated oven for 20 minutes, or until it begins to soften and turn golden brown.
Add Cheese and Bake:
Remove the cauliflower from the oven and sprinkle the shredded mozzarella and grated Parmesan over the top.
Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
Serve:
Garnish with freshly chopped parsley and serve immediately.
