Cheesy Pan-Fried Zucchini Rounds

1. Prepare the Zucchini:
Slice the zucchinis into 1/4-inch thick rounds and pat them dry with paper towels to remove excess moisture.
2. Set Up Breading Station:
In one bowl, place the flour and season with salt and pepper.
In a second bowl, place the beaten eggs.
In a third bowl, combine the breadcrumbs, garlic powder, Italian seasoning, and shredded cheese.
3. Bread the Zucchini:
Dip each zucchini round first in the flour, then in the beaten eggs, and finally in the breadcrumb mixture, pressing gently to ensure it sticks.
4. Pan-Fry the Zucchini:
Heat olive oil or butter in a large skillet over medium heat.
Add the breaded zucchini rounds in a single layer (you may need to cook in batches).
Fry for about 3-4 minutes on each side until golden brown and crispy.
5. Drain and Serve:
Remove the cooked zucchini rounds from the skillet and place them on paper towels to drain excess oil.
Serve warm as a delicious side dish or appetizer.
