Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish.
In a large bowl, whisk together the sugar, eggs, milk, melted butter, vanilla extract, and salt until smooth.
Gradually add the flour to the wet mixture, stirring until well combined.
Stir in the shredded coconut, and lemon zest if using, making sure the coconut is evenly distributed.
Pour the mixture into the prepared pie dish.
Bake for 45-50 minutes, or until the top is golden brown and the center is set but still slightly jiggly.
Let the pie cool completely before serving to allow the layers to fully form.
