Crispy Cheesy Potato Fritters

  • Start by grating the potatoes and squeezing out any excess moisture using a clean towel or cheesecloth. This step is important to ensure the fritters stay crispy.
  • In a mixing bowl, combine the grated potatoes, cheddar cheese, Parmesan cheese, and green onions. Mix well.
  • In a separate bowl, beat the eggs and add them to the potato mixture. Stir until evenly incorporated.
  • Gradually add the flour, mixing until the ingredients come together. Season with salt and pepper.
  • Heat a skillet over medium heat and add enough oil to cover the bottom. Once the oil is hot, drop spoonfuls of the potato mixture into the skillet, pressing down slightly to flatten.
  • Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  • Garnish with fresh dill, if desired, and serve warm.
