Start by preheating your oven to 350℉ and lining your baking sheets with parchment paper or a silicone liner. In a large bowl, mix together the butter, brown sugar, and granulated sugar until smooth. Add in the egg and vanilla , mixing until just combined. In a small bowl, dissolve the baking soda in the hot water and add this to the batter. Stir in the salt and flour until everything is just combined. Fold in the chocolate chips, and then scoop out spoonfuls of dough (about 2 tablespoons each) and place them on the prepared baking sheets.
Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your easy and chewy chocolate chip cookies!
