Sauté garlic and shrimp: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add minced garlic and cook for 30 seconds. Add shrimp and cook for 2-3 minutes per side until they turn pink. Remove shrimp and set aside.
Stir-fry vegetables: In the same skillet, add another tablespoon of olive oil. Add asparagus and mushrooms, cooking for 4-5 minutes, until they’re tender.
Combine and flavor: Add shrimp back into the skillet. Stir in soy sauce, lemon juice, and honey. Cook for another minute to allow flavors to combine. Season with salt and pepper to taste.
Garnish and serve: Sprinkle with fresh parsley and serve hot with rice or noodles
