Hands down, this is the best meatloaf recipe we’ve ever had in our house

Ingredients:

For the Meatloaf:

1 lb. ground beef
1 lb. ground pork
1 cup breadcrumbs (panko or regular)
½ cup whole milk
2 large eggs
1 small onion (grated or finely minced)
3 cloves garlic (minced)
2 tablespoons Worcestershire sauce
1 teaspoon Dijon mustard
1 tablespoon fresh parsley (chopped)
1 teaspoon dried thyme
½ teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
For the Glaze:

¼ cup ketchup
1 tablespoon brown sugar
1 teaspoon Dijon mustard
1 tablespoon apple cider vinegar
For the Caramelized Onion Gravy:

2 large onions (thinly sliced)
3 tablespoons unsalted butter
1 tablespoon olive oil
2 tablespoons all-purpose flour
3 cups beef broth
1 teaspoon Worcestershire sauce
½ teaspoon dried thyme
Salt and pepper to taste
Instructions:

1. Prepare the Meatloaf Mixture:
In a large mixing bowl, combine breadcrumbs and milk. Let the mixture sit for 5 minutes to soften. Add ground beef, ground pork, eggs, grated onion, garlic, Worcestershire sauce, Dijon mustard, parsley, thyme, smoked paprika, salt, and pepper. Gently mix with your hands until just combined. Be careful not to overmix, as this can make the meatloaf dense.

2. Shape and Bake:
Preheat your oven to 375°F (190°C). Transfer the meatloaf mixture onto a parchment-lined baking sheet or loaf pan. Shape it into a loaf, smoothing the top.

3. Make the Glaze:
In a small bowl, whisk together ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Brush a generous layer over the top of the meatloaf.

4. Bake to Perfection:
Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). If the top browns too quickly, loosely tent the meatloaf with foil.

5. Caramelize the Onions:
While the meatloaf bakes, heat butter and olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 25-30 minutes until deeply golden and caramelized. If the onions begin to stick, add a splash of water to deglaze the pan.

6. Make the Gravy:
Once the onions are caramelized, sprinkle the flour over the onions and cook for 2-3 minutes, stirring constantly. Gradually whisk in the beef broth. Add Worcestershire sauce, thyme, salt, and pepper. Simmer for 10-15 minutes until the gravy thickens.

7. Serve & Enjoy:
Let the meatloaf rest for 10 minutes after baking. Slice and serve generously with caramelized onion gravy drizzled on top. Pair with mashed potatoes, roasted vegetables, or a side salad.
