“Hobo Casserole: Rustic Campfire Beef and Potato Delight

Preheat the Oven: Set your oven to 350°F (175°C).
Prepare the Beef: In a 10″ cast iron skillet (or a small casserole dish), add the ground beef and press it down. Season with salt and pepper to taste.
Layer the Onions: Sprinkle the diced onions over the beef.
Add the Potatoes: Lay the sliced potatoes evenly over the onions.
Sprinkle Cheese: Evenly sprinkle the grated cheddar cheese over the top of the potatoes.
Mix the Soups: In a medium bowl, combine the cream of chicken soup, cream of potato soup, Worcestershire sauce, milk, and Creole seasoning. Whisk until well blended.
Pour the Mixture: Carefully pour the soup mixture over the cheese, trying to spread it evenly.
Bake: Cover the dish with aluminum foil and bake in the preheated oven for 1½ hours.
Finish with Fried Onions: Remove the foil, sprinkle crispy French fried onions on top, and place under the broiler for a few minutes until golden brown.
