1️⃣ Prepare the Chicken:
Preheat your oven to 375°F (190°C).
Season both sides of the chicken breasts with paprika, garlic powder, onion powder (optional), salt, and pepper.
2️⃣ Cook the Chicken:
In a large skillet, heat olive oil over medium-high heat.
Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and cooked through (the internal temperature should reach 165°F/74°C). Once cooked, remove the chicken and set aside.
3️⃣ Prepare the Mustard Sauce:
In a small bowl, whisk together Dijon mustard, honey, mayonnaise, and lemon juice until smooth. Set aside.
4️⃣ Sauté the Mushrooms:
In the same skillet, melt butter over medium heat. Add the sliced mushrooms and sauté for 3-4 minutes until they are softened and slightly caramelized.
5️⃣ Assemble the Chicken:
Place the cooked chicken breasts back into the skillet or a baking dish.
Drizzle the mustard sauce over each chicken breast, spreading it evenly.
Top with the sautéed mushrooms and sprinkle the crumbled bacon evenly over the chicken.
Cover with a generous amount of shredded Monterey Jack and cheddar cheese.
6️⃣ Bake the Chicken:
Place the skillet or baking dish in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
7️⃣ Serve and Garnish:
Remove the chicken from the oven and garnish with freshly chopped parsley.
Serve the Alice Springs Chicken with your favorite sides, like mashed potatoes, steamed vegetables, or a crisp salad
