Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Wash and slice the sweet potatoes into thick rounds, about 1/2 inch thick.
Place the sweet potato rounds on the prepared baking sheet and drizzle them with olive oil.
Mix the spices (cinnamon, smoked paprika, cumin, coriander, red pepper flakes, salt, and pepper) in a small bowl. Sprinkle this mixture evenly over the sweet potatoes, making sure they are well coated.
Bake for 25-30 minutes, flipping the rounds halfway through, until the sweet potatoes are golden and tender.
Remove from the oven and drizzle with honey to taste.
Top with crumbled feta and sprinkle fresh chives or parsley over the rounds.
