Step 1: Marinate the Beef
Prepare the marinade: In a mixing bowl, combine the soy sauce, Shaoxing wine or dry sherry, cornstarch, minced garlic, grated ginger, and sugar. Mix well.
Marinate the beef: Add the sliced beef to the marinade, ensuring all pieces are well coated. Let it marinate for at least 15-20 minutes, or up to 1 hour for more flavor.
Step 2: Prepare the Sauce
Mix the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, and water or beef broth until smooth. Set aside.
Step 3: Stir-Fry the Beef and Vegetables
Heat the skillet: Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat until hot.
Cook the beef: Add the marinated beef to the skillet in a single layer. Cook for 2-3 minutes, stirring occasionally, until the beef is browned and cooked through. Remove the beef from the skillet and set it aside.
