Sweet Potato Cakes Recipe

In a large bowl, mix the mashed sweet potatoes, egg, flour, breadcrumbs, green onions, garlic powder, paprika, salt, and pepper until well combined.
Form the mixture into small patties, about 3 inches in diameter.
Heat olive oil in a skillet over medium heat.
Fry the sweet potato cakes for 3-4 minutes on each side, or until golden brown and crispy.
Remove and drain on a paper towel-lined plate. Serve warm with your favorite dipping sauce.
