Cook the Beef: In a large skillet over medium heat, brown the ground beef until fully cooked, approximately 5-7 minutes. Drain any excess grease.

Add the Flavor: Stir in the taco seasoning and the diced tomatoes and green chiles. Let the mixture simmer for 3-4 minutes, allowing the flavors to meld. Remove the skillet from heat.

Prepare the Phyllo Shells: While the beef mixture is cooling, preheat your oven according to the phyllo tart shells package instructions. Arrange the frozen phyllo tart shells on a baking sheet.

Assemble the Bites: Spoon the beef mixture generously into each tart shell, filling them to just above the edges.

Add Cheese and Dressing: Sprinkle shredded cheddar cheese over each filled tart shell, then drizzle ranch dressing on top for added creaminess.

Bake the Bites: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the phyllo shells are golden brown.
