Vegan Coconut Truffles

Ingredients:

3 cups Dessicated Coconut (240g)
3/4 cup Vegan Condensed Milk (180ml)
1 1/2 cups Chopped Vegan Chocolate or Chocolate Chips (262g)
1 tsp Coconut Oil
Instructions:

In a mixing bowl, combine the vegan condensed milk and 1 cup of the dessicated coconut. Gradually add the remaining coconut, mixing until a thick dough forms.
Roll the dough into balls and place them evenly on a parchment-lined baking tray. Transfer the tray to the freezer for approximately 15 minutes to allow the balls to harden.
In a microwave-safe bowl, combine the chopped vegan chocolate and coconut oil. Microwave in 30-second intervals, stirring each time, until the chocolate is completely melted.
Dip each coconut ball into the melted chocolate, using two teaspoons to coat them evenly. Place the coated balls back onto the parchment-lined tray.
Once all the balls are coated in chocolate, sprinkle additional dessicated coconut on top. Return the tray to the freezer to allow the chocolate to set.
Once the chocolate has set, your Vegan Coconut Truffles are ready to enjoy! Store any leftovers in the fridge and serve cold directly from the fridge to prevent the chocolate from melting.
