Vegan Lemon Tart

INGREDIENTS:

FOR TART CRUST:

  • All-purpose flour 1 1/4 cups
  • Vegan Butter 1/3 cup
  • Granulated Sugar 3 tbsps
  • Cold water 2 tbsps

FOR LEMON FILLING:

  • Canned coconut  cream 1 3/4 cups
  • Granulated sugar 1/2 cup, or add according to taste
  • Fresh lemon juice 1/3 cup
  • Cornstarch 1/3 cup. You can also add cornflour.
  • Vanilla extract 1 tsp
  • Turmeric a pinch
  • Salt, add according to taste. It’s optional. You can skip it.
