INGREDIENTS:
FOR TART CRUST:
- All-purpose flour 1 1/4 cups
- Vegan Butter 1/3 cup
- Granulated Sugar 3 tbsps
- Cold water 2 tbsps
FOR LEMON FILLING:
- Canned coconut cream 1 3/4 cups
- Granulated sugar 1/2 cup, or add according to taste
- Fresh lemon juice 1/3 cup
- Cornstarch 1/3 cup. You can also add cornflour.
- Vanilla extract 1 tsp
- Turmeric a pinch
- Salt, add according to taste. It’s optional. You can skip it.
