Ingredients
 Breadcrumbs – 150 g (1.5 cups)
 Cheese (Gouda or Emmental) – 120 g (cut into thin slices)
Cooked Ham – 120 g (thinly sliced)
Grated Parmesan Cheese – 60 g (½ cup)
Chicken Breast Fillets – 10 slices (about 1-1.5 kg of chicken)
Extra Virgin Olive Oil – 2 tbsp (for coating the chicken and greasing the baking tray)
Step-by-Step Instructions
Step 1: Preparing the Coating
In a medium mixing bowl, combine the breadcrumbs and grated Parmesan cheese. Mix well to ensure the cheese is evenly distributed with the breadcrumbs. This will be the coating that gives the chicken rolls their crunchy, golden crust.

Step 2: Coating the Chicken
Take the chicken breast fillets and brush each slice generously with extra virgin olive oil. Lightly rub the oil into each piece, which helps the breadcrumb mixture adhere and keeps the chicken moist while baking. Dredge each oiled chicken fillet in the breadcrumb and Parmesan mixture, pressing down lightly so the coating sticks. Place each coated fillet on a plate as you prepare them.
