1. Make the Cheesecake Filling:
In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Scoop small teaspoons of the filling onto a parchment-lined baking sheet. Flatten slightly and freeze for 1-2 hours, or until firm.
2. Prepare the Cookie Dough:
In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs and vanilla extract, mixing until combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Fold in the chocolate chips.
3. Assemble the Cookies:
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Take a tablespoon of cookie dough and flatten it into a disc. Place a frozen cheesecake filling piece in the center.
Cover the filling with another tablespoon of cookie dough, sealing the edges to encase the filling fully. Roll into a ball and place on the baking sheet, leaving enough space between cookies.
4. Bake the Cookies:
Bake for 12-15 minutes or until the edges are golden brown. The centers will remain soft.
Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
