Stuffing the chicken thighs:
Take a portion of the prepared filling and place it in the center of each chicken thigh.
Wrap the chicken thigh around the filling and secure the ends with toothpicks or skewers to prevent the filling from coming out during cooking.
Bread the chicken thighs:
In a bowl, beat the eggs with a pinch of salt.
In a separate bowl, place the breadcrumbs.
Dip the stuffed chicken thighs first in the beaten egg and then in the breadcrumbs, making sure to coat all surfaces.
Cook the chicken thighs:
Heat a little olive oil in a nonstick skillet over medium-high heat.
Place the breaded chicken thighs in the skillet and cook for about 5 to 7 minutes on each side, or until golden brown and crispy and the chicken is cooked through.
